Tuna Pasta Recipe

R​ushing from work with no time to prepare for dinner? This has been my dilemma for such a long time now that I have mastered the art of kitchen hacks when preparing for lunch or dinner for my family.

As a working mom, balancing work and family can be a struggle. We continue to work because we want to be able to provide for our family but we are also battling the guilt for not having enough time for motherly duties at home. One thing that I always pray for though, is that I will be able to continue feeding my family good and healthy food despite what little time (and energy!) I have left after a long day of work. 

With that, I am sharing a trusted and super easy recipe that you can prepare without a fuss. I learned this from a fellow mommy blogger and have made this for my kids numerous times and I hope your family will enjoy it too!

Here's the Recipe:

Tuna Pasta Recipe

Ingredients
250g Penne Pasta
1 can (155g) of Century Tuna Lite, drained
1 large red bell pepper, julienned
1 large green bell pepper, julienned
1 large onion, sliced thinly
2 cloves garlic, minced
Cooking oil
Salt
Chopped parsley for garnishing

Instructions
Cook pasta according to instructions, drain and set aside.
Heat 1 tablespoon of cooking oil in a pan, saute garlic.
Add onions and cook until translucent.
Add red and green bell peppers.
Add tuna flakes.
Add the Penne pasta and mix well.
Add salt to taste.
Remove from heat, serve warm garnished with chopped parsley

Puto Maya Recipe

Here's and easy Puto Maya Recipe!

When I was about 7 years old, I went to live with my great grandmother in Ozamis for a few years and one thing I remember about my stay there were the breakfasts. There was puto maya every single day. There were different food every morning but Puto Maya was always present. It was like a breakfast staple.

Growing up, I have started skipping breakfast (bad, I know) but there are days when I miss my mornings at my great grandma's house that I decided to learn how to cook Puto Maya. My mom taught me this recipe and it's so easy that you can also do it yourself at home. Now take note that this is not the traditional way of cooking the delicacy but it is some sort of like an easier way. :)

Ingredients

Glutinous rice ( 3cups) 
Coconut milk (4 cups)
Sugar (1 cup or less)
Small ginger root (1), peeled and smashed
A sprinkle of salt

Instructions

Wash and soak glutinous rice in water for at least 2-3 hours. Place glutinous rice in a cooking pot. Add coconut milk, cover and cook over medium heat until it comes to a boil. Add ginger, sugar, salt and mix well. Reduce heat and let it simmer for about 20-30 minutes, stirring occasionally until rice is done. Discard ginger and mold cooked sticky rice with cups.Serve with ripe mangoes and sikwate or brown sugar on the side.

Just remember that the soaking part is a very important step in this recipe if you want to go the easy way because it cuts down the cooking time. Also, the ginger root is non negotiable ingredient. It’s the one responsible for the distinct taste and aroma of the puto maya.
