Chedz Culinary Club Presents: How to make BAM-I

Bam-i is a noodle dish known to have originated in the Visayas region, particularly in Cebu.  It's similar to pancit canton but mixed with vermicelli (sotanghon) noodles. Here's a quick tutorial on how to make this staple Cebuano dish. 
Ingredients:
  • 1/4 cup achuete oil
  • 4 cloves garlic, pounded
  • 1/4 cup onions, sliced
  • 1 cup boiled pork meat, sliced
  • 1 cup chicken, boiled and shredded
  • 1/4 cup shrimps, sliced
  • 1/4 cup liver and gizzard, sliced
  • 2 tablespoon bukni
  • 1 pc. chorizo macao, sliced
  • 1/4 cup dried squid, soaked and sliced (optional)
  • 100 gms. pancit canton noodles
  • 250 gms. sotanghon, soaked and cut into short pcs.
  • salt, pepper and vetsin to taste
  • 4 cups soup stock
  • 1/4 cup sliced green onions for garnishing
  • kalamansi for garnishing

Procedure:
Sauté garlic and onions in oil. Add meats and soup stock. Simmer until cooked. Season to taste. Add noodles and cook for 5 minutes. Garnish with spring onions and serve with kalamansi.
