What is Humba? It's a typical Visayan dish made of pork braised with soy sauce and sugar, cooked until tender. Some say it means HUmot (fragrant) na BAboy or HUmok (soft) na BAboy. There are different versions of this dish. While some add in eggs, banana blossoms or bananas, this recipe calls for very simple ingredients. Have a try at this mouth watering dish. Ingredients: 1 Kilo Pork belly or shoulder cut into 2 inch squares 1 can pineapple juice 5 cloves garlic, pounded 1/2 cup vinegar 1/2 cup brown sugar 2 tbsp. soy sauce 1/4 cup salted black beans 1/2 tsp. paprika salt and pepper to taste 2 pcs. bayleaf Procedure: Pour pineapple juice, garlic, vinegar, brown sugar, soy sauce and black beans over meat. Mix well. Cover and boil until fat is rendered. Add seasonings and enough water to cook meat. Adjust seasoning if need. Continue cooking until meat is tender.
