In the early seventies, my mother, Mercedes "Chedette" Corazo, started designing and baking cakes for the birthdays and weddings of her friends. The reception of her creations was such that she decided to start a cake business. These were the beginnings of Chedz Designer Cakes.
My mother is such a great example in her dedication to the craft: she completed a course in the American Institute of Baking and several art classes in UP, all the while making thousands of cakes throughout the years. I literally grew up around an overwhelming volume of cakes and pastries—so much so that when I was around ten, I told her in a very serious tone that she shouldn't even dare think of involving me in her business. Providence must have a sense of irony, because, among us five siblings, it was I who eventually discovered a passion for cake baking and decorating.
My mother has migrated in the US, and she has handed over the business to me. I have fond memories of my mother showing albums and albums of her creations to couples preparing for marriage or moms preparing for their kid's birthdays. The clients would get so excited in seeing cakes that complete their dream event. She would then design something unique based on the cakes they liked, the motif and the budget.
With this blog, I hope to give the same service to our customers in the comfort of their own homes. I will be posting pictures of our cakes—cakes for weddings, debuts, birthdays, and for all those special days we wish to celebrate with a cake—and continue the tradition that my mother started more than thirty years ago.
