Rushing from work with no time to prepare for dinner? This has been my dilemma for such a long time now that I have mastered the art of kitchen hacks when preparing for lunch or dinner for my family.
As a working mom, balancing work and family can be a struggle. We continue to work because we want to be able to provide for our family but we are also battling the guilt for not having enough time for motherly duties at home. One thing that I always pray for though, is that I will be able to continue feeding my family good and healthy food despite what little time (and energy!) I have left after a long day of work.
With that, I am sharing a trusted and super easy recipe that you can prepare without a fuss. I learned this from a fellow mommy blogger and have made this for my kids numerous times and I hope your family will enjoy it too!
Here's the Recipe:
Tuna Pasta Recipe
250g Penne Pasta
1 can (155g) of Century Tuna Lite, drained
1 large red bell pepper, julienned
1 large green bell pepper, julienned
1 large onion, sliced thinly
2 cloves garlic, minced
Chopped parsley for garnishing
Cook pasta according to instructions, drain and set aside.
Heat 1 tablespoon of cooking oil in a pan, saute garlic.
Add onions and cook until translucent.
Add red and green bell peppers.
Add tuna flakes.
Add the Penne pasta and mix well.
Add salt to taste.
Remove from heat, serve warm garnished with chopped parsley
