Ingredients 3 1/4 cup (400g) Flour 2/3 cup sugar (130g) Sugar 2 eggs 2 tablespoon (30g) Butter 2 tsp liquid ube flavoring 1/4 cup coconut milk 1 tsp salt 1 tsp yeast 1 cup (200 g) mashed ube 1 box cheddar cheese cut into small pieces breadcrumbs 1 tsp vegetable oil In a bowl mix 3/4ths of the flour, salt and yeast. Mix well In another bowl mix coconut milk, ube, ube flavoring, eggs and sugar Add in wet ingredients to dry ingredients Mix until incorporated Add in butter Mix well Add in the rest of the flour Form dough into ball Grease a clean bowl with oil Place dough in the well oiled bowl Cover with cloth or plastic wrap Proof for at least 1 1/2 hours Punch down the dough Portion the dough into small balls, around 45g each Flatten the ball and add in cheese Roll into balls Roll balls in breadcrumbs Place balls in a non-stick baking pan or parchment lined pan Let proof for at least 30 minutes Preheat oven 325f Bake for 20 minutes or until the breadcrumbs turn slightly brown Let rest for a few minutes Enjoy while hot |
